8 oz (approx. 225g): Fettuccine, spaghetti, or pasta of choice
-
5.5 oz (150g): Champignon (button) mushrooms or preferred mushrooms, sliced
The Tom Kha Alfredo Sauce
-
1 packet: TAAN THAI Tom Kha Cooking Kit
-
2 tbsp: Unsalted butter (divided)
-
2 cloves: Garlic, minced
-
1 cup: Heavy cream or whipping cream
-
¾ cup: Grated Parmesan cheese
-
½ cup: Reserved pasta water (for adjusting thickness)
-
To taste: Black pepper
For Garnish
-
A sprinkle: Extra Parmesan cheese
-
To taste: Sliced red chili
-
A pinch: Finely shredded Makrut lime leaves or cilantro
How to Make It
1. Boil the Pasta (Al Dente)
Boil the pasta in salted water according to the package instructions until al dente. Before draining, make sure to reserve about ½ cup of the starchy pasta water. Drain the pasta and set it aside.
2. Infuse and Strain the Tom Kha (Extract the herbs)
In a small saucepan, add the TAAN THAI Tom Kha Cooking Kit. Simmer over low heat for 3–4 minutes to let the dried herbs release their aromas and flavors. Pour the sauce through a fine strainer to remove the solid herbs (galangal, lemongrass, and makrut lime leaves). Set the infused broth aside.
3. Sauté the Mushrooms and Aromatics (Golden and fragrant)
In a large skillet over medium heat, melt 1 tbsp of the butter. Add the sliced mushrooms and sauté for 3–4 minutes until they are tender and beautifully golden brown. Add the remaining 1 tbsp of butter and the minced garlic. Sauté for another 20–30 seconds until highly fragrant (be careful not to burn the garlic!).
4. Build the Creamy Alfredo Sauce (Low heat is key)
Pour the strained Tom Kha broth into the skillet with the mushrooms and reduce the heat to low. Gradually stir in the heavy cream, followed by the grated Parmesan cheese. Stir continuously until the cheese is completely melted and the sauce becomes incredibly smooth and creamy.
5. Toss and Adjust (Glossy and coated)
Add the cooked pasta to the skillet, tossing gently to coat the noodles evenly. If the sauce is too thick, splash in the reserved pasta water, 1–2 tablespoons at a time, until you reach your desired creamy consistency. Season with black pepper to taste. (Note: Taste before adding any salt, as the Parmesan cheese and Tom Kha kit are already perfectly savory).
6. Plate and Garnish (Serve immediately)
Transfer the warm pasta to serving plates. Top with a little extra Parmesan cheese, sliced red chilies for a pop of color, and finely shredded Makrut lime leaves or cilantro. Serve immediately while hot and enjoy!
💡 Chef's Tip for the Perfect Sauce
Never skip reserving your pasta water! This starchy water is liquid gold. If your Alfredo sauce breaks or gets too thick while tossing, a splash of hot pasta water will magically emulsify the cream and cheese, bringing the sauce back to a glossy, silky perfection.
