Tom Kha with Fried Mushroom

Tom Kha is a stable soup dish in all Thai households. It is also served in many restaurants there. Tom Kha is a mix of clear spicy soup, like Tom Yum, and curry dishes, like green curry or red curry. Tom Kha contains light coconut milk like curry and is infused with similar herbs like Tom Yum. So it is something in between Tom Yum and Thai Coconut Curry. It is perfect to clear your palette before a heavy meal.

TAAN THAI Tom Kha soup mix is based on our household recipe and also vegetarian-friendly. We make sure that the taste is authentic and, most of all, delicious. In this recipe, we share with you some special twist that we do at home - Tom Kha with Fried Mushroom!

Ingredients

  • 100-150g mixed types of mushroom (such as enoki mushroom, Portobello Mushroom, or oyster mushroom)
  • 1/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup cold water
  • 1/2 tbsp vegetable oil
  • Oil for frying
  • 1 pack of TAAN THAI Tom Kha Soup Mix

Instructions

  1. Prepare all mushrooms cut into smaller pieces or leave them whole.
  2. Mix together flourcornstarchbaking powder, and salt in a bowl. Add cold water and vegetable oil, whisk until you get a smooth batter with a consistency similar to pancake batter.
  3. Heat the oil in a pan over medium to high heat.
  4. Take each mushroom and dip it into the batter, ensuring it’s evenly coated. Then, carefully put the mushrooms into the heated oil, one by one. Fry for a few minutes until they attain a light golden color on all sides.
  5. Boil 1-1 1/4 cup (250-300ml) of water. Add 8 oz (225g) of protein (typically chicken, white fish, or tofu). Certain proteins may take longer to cook, so consider adding some more water if needed.
  6. Add one pack of TAAN THAI Tom Kha Soup Base, already including dried coconut powder and dried Tom Kha herbs (lemongrass, Thai galangal, kaffir lime leaves, and chili), to the pot. (TIP: Thai people usually don't eat lemongrass, Thai galangal, or kaffir lime leaves. These herbs are there for the aroma.)
  7. Stir well on medium heat until everything is cooked.
  8. Serving with fried mushrooms on the side or over the Tom Kha Soup. Do not leave the fried mushroom in the soup for too long.
